Composition for the treatment of whey to obtain complete separation of the proteins contained in it and process using this composition

The invention relates to a composition and a process which uses it according to which it is possible to completely separate the proteins contained in whey, the composition is characterised by a suspension, having the indicated concentration, of bentonite in whey which has been allowed to "mature" at ambient temperature for more than 1 hour. The process which uses the said composition provides that the whey from which the proteins have to be removed is previously acidified to a pH between 2.5 and 2.9 and to this the "matured" bentonite composition is added with stirring until a final indicated concentration is obtained. Once the operation is complete it is allowed to settle; the clear supernatant does not include proteins, while the bentonite which has "matured" in the whey as such has formed a complex with the whey proteins which can be separated by any solid-liquid separation technique.
