The invention relates to a recombinant deoxyribonucleic acid (DNA) which canbe isolated from Aspergillus soyae, which is coded for a leucineaminopeptidase (LAP) and has a nucleotide sequence corresponding to that givenin SEQ ID NO:1 for ripe LAP or one derived thereform, which hybridises instringent conditions with the nucleotide sequence given in SEQ ID NO:1 forripe LAP. The invetion also relates to vectors, transformed host organisms anda process for the production of LAP. Enzyme products for the production ofprotein hydrolysates and correspondingly produced protein hydrolysates alsoform part of the invention.
