The invention relates to a process for measuring the laccase activity in musts by the syringaldazine method, in which a quantity of must is collected, clarified, injected under pressure through a resin capable of adsorbing the anthocyanins and the tannins, and a sample consisting of must, syringaldazine and a buffer solution is prepared, and colorimetric measurements are performed on the sample from which the laccase activity is determined. In addition, a sample containing must and an iodinated solution is prepared in parallel, the possible presence of sulphur dioxide in this sample is checked, and a signal for inhibiting the measurement of the laccase activity is delivered if the free sulphur dioxide level is greater than a predetermined threshold.
