Thermal treatment of materials containing water, esp. foods includes condensing the steam produced inside the treatment volume, collecting the condensed water, and leading it away. Also claimed is a device to carry out the method. Pref. the steam is brought into contact with a condenser through which a coolant flows. The steam is cooled down over an interception funnel and the condensate is removed via a pipe.
