Method for producing quick-cooking leguminous plants comprising the following stages: (a) increasing the water content of the leguminous plants; (b) partially cooking the leguminous plants of stage (a); (c) freezing the partially cooked leguminous plants of stage (b); (d) defrosting the frozen leguminous plants; (e) optionally reshaping the partially cooked, frozen and defrosted leguminous plants so as to form an extrusion product, incorporating other desired food ingredients; and (f) removing a sufficient amount of moisture from the defrosted or extruded leguminous plants so as to make them stable for storage at room temperature.
