Strain of an inhibiting bacterium listeria in the munster

A bacterial strain, esp. Lactobacillus brevis BN85 (DSM 9296), which is derived from a soft paste cheese (esp. Munster type) and inhibits the growth of Listeria bacteria is new. Also claimed are: (1) an extract of a culture of a strain defined as above, where the extract has inhibitory activity against Listeria monocytogenes; (2) a bacterial stain that inhibits Listeria monocytogenes; and (3) a method for producing Listeria-free cheese in which a soln. contg. the above strain or a bacteriocin is applied to the cheese after curd prodn.
