Process for analysing the internal structure of products, e.g. meat products, tubers or vegetables, comprises; (a) illuminating a spot on the product with one or more convergent beams; (b) collecting the energy diffused back by an analysis surface centred on the incidence point; (c) focussing the back-diffused energy on a structured detector (5) which segments the analysis surface and generates signals representing the intensity of energy diffused back by the individual segments; and (d) processing the signals according to programmed criteria, based on comparison of the value of the signals with a predetermined reference value, to generate information representing the internal structure of the analysed product. Also claimed is an analysis appts. for carrying out the above process.
