PROBLEM TO BE SOLVED: To obtain the subject enzyme, comprising a synthetase for producing coniferyl alcohol, coniferyl aldehyde, ferulic acid, vanillin and vanillic acid from eugenol and capable of providing natural vanillin, etc. ;SOLUTION: This new synthase is useful for producing coniferyl alcohol, coniferyl aldehyde, ferulic acid, vanillin and vanillic acid from eugenol and comprises eugenol hydroxylase for producing the coniferyl alcohol from the eugenol, coniferyl alcohol dehydrogenase for producing the coniferyl aldehyde from the coniferyl alcohol, coniferyl aldehyde dehydrogenase for producing the ferulic acid from the coniferyl aldehyde, ferulic acid deacytlase for producing the vanillin from the ferulic acid and vanillin dehydrogenase for producing the vanilic acid from the vanillin and is capable of providing natural vanillin, etc. The enzymes are obtained from microorganisms.;COPYRIGHT: (C)1998,JPO
