PROBLEM TO BE SOLVED: To provide Jews mallow (Corchorus olitorius L.) extract and Jews mallow extract-contg. drinks which are effectively degraded in the viscosity specific to the Jews mallow extract and may be safely orally taken. SOLUTION: An org. acid at 0.0025 to 0.7wt.% of the water for extraction and dry Jews mallow leaves at 3 to 10wt.% are charged to water for extraction and the extract is extracted with the hot water under stirring for 30 minutes for about 15 minutes to about 30 minutes at about 90 to 95 deg.C. The extraction liquid (extract) is separated and extracted from the extraction residue by executing a sepn. of solid from the liquid after the extraction, by which the Jews mallow extract is obtd. The resulted Jews mallow extract is compounded at 1 to 80% in terms of weight with drink raw materials, such as, for example, vegetable and fruit juice, etc., by which the drinks easily drinkable in terms of viscosity and flavor are finished.
