Prodn. of ajoene (I) comprises: a) mixing allicin, opt. dissolved in water and/or a water-miscible solvent, with alpha -, beta - and/or gamma -cyclodextrin to form a water-contg. compsn.; b) drying the compsn. obtd.; and c) isolating (I) from the dried compsn. by decomplexing and extn. Complexes of (I) with alpha -, beta - and/or gamma -cyclodextrin are also claimed.
