A new measuring instrument for the biological denitrification process is defined. The nitrate concentration, the denitrification stoichiometry and the denitrification can be kinetically measured in a reliable manner with no sample preparation. A pH regulator, applied to a sample that contains denitrifying bacteria, allows the biological denitrification reaction to be followed at a constant pH by registration of the rate of oxygen addition. The pH is held constant to combat interference from buffering components. The rate of the oxygen addition of the regulator is used to: add biodegradable organic carbon to a sample that contains nitrate in such a way that the added quantity matches the quantity that is required to transform all the nitrate; - add nitrate to a sample that contains biodegradable organic carbons in such a way that the added quantity matches the quantity required to transform all biodegradable organic carbon.
