Procedure for obtaining fish extracts, bioderived active principles, and the applications thereof in medicine and nutrition. The procedure comprises a series of phases which include isolating the muscle tissue of the fish, freezing it between -20 and -40 degree C, freeze-drying it, grinding it and mixing it with water, with homogenization by ultrasound, followed by freeze-drying and pulverization. The fish extracts so obtained are products with a high protein content, with important applications in medicine and nutrition.
