2-(1-alkoxyethenyl)-1-pyrroline compounds are useful infood flavorant compositions. 2-acetyl-1-pyrroline is preparedby hydrolyzing a 2-(1-alkoxyethenyl)-1-pyrroline compound withan acid and neutralizing the reaction medium with an equimolaramount of a base to obtain a neutralized reaction mediumcontaining the 2-acetyl-1-pyrroline. A cyclodextrin and/ormaltodextrin support material is added to the neutralizedmedium which is then freeze-dried to isolate the 2-acetyl-1-pyrrolinewith the support to obtain the 2-acetyl-1-pyrrolineincorporated with the support material. A powder-formcomposition of 2-acetyl-1-pyrroline incorporated with a supportof maltodextrin and/or cyclodextrin is also disclosed.
