To control the efficiency of a centrifuge with an intermittent operation, especially a sugar centrifuge, the thickness of the layer of built-up solid matter on the drum wall is measured during operation. The control action is effected according to a present layer thickness for the solid build-up, the filling mass feed and the feed of a vol. of washing fluid.
