Use of α-alanine-N, N-diacetic acid and its salts of the formula I IMAGE in which R: is methyl and; M: means hydrogen, alkali metal, alkaline earth metal, ammonium or substituted ammonium in the corresponding stoichiometric amounts, as a complexing agent for alkaline earth and heavy metal ions in alkaline detergent formulations for cleaning processes in the beverage and food industry.
