SUBSTANCE: method involves staged chopping; catching contaminants; massaging meat pieces with caught contaminants with periodically changing intensity prior to final stage. In case some meat pieces are not chopped, they may be withdrawn and returned for additional chopping. Chopper cutting unit has throat with branch pipe for separate discharge of inclusions, multiple-blade knives 4,5 mounted on shaft 10 and adjoined to fixed grids 1,2,3. Knives are made single-sided. Spacer sleeves are positioned between knife hubs, which are put onto shaft. Volume of throat between two subsequent grids has predetermined value. At least one sleeve may be formed as cylinder made composite along its length. Grids may be provided with annular shock-absorbers. Knife blades are made from material with increased toughness.
