Curing furnaces, comprising a block (6), an external enclosure (2), a manifold (8) formed of two plates (9, 10), parallel defining a space (11) which collects the vapors and gases generated in the block, which communicates with that - latter by a conduit (7) in which is mounted a block of catalyst (28), the control of the temperature, in the cooking phase or cleaning by pyrolysis, being carried out by means of at least one sensor (30) which is sensitive to temperature or the composition of the vapors or fumes, in order to provide a control signal of the electrical resistors (21), characterized in that the sensor (30) is disposed in the manifold (8), substantially in the downstream end of an orifice through which the conduit communicates with the space (11) for collecting the gases, this sensor being permanently scavenged by the ambient air supplied by a fan (13) connected to the inside of the collector, so as to reduce the temperature of these gases in contact with the sensor.
