The invention concerns a micro-nutritional composition for providing essential fatty acids to subjects, by means of phospholipids rich in polyunsaturated fatty acids contained in the egg yolk of farmyard birds previously fed with n-3 and n-6 series fatty acids. This composition is characterised in that it contains amounts of DHA and EPA such that the mass ratio of DHA/DHA+EPA is close to 0.9.
