OVERSEAS PRODUCTION OF 'NATTO' FOR DOMESTIC SALES AND IMPORTATION THEREOF

PROBLEM TO BE SOLVED: To provide a method for enabling the overseas production of a 'Natto' (soybean fermented) with Bacillus natto so that the unit cost of the 'Natto' for domestic sales may be reduced by changing a production process. ;SOLUTION: A 'Natto' is produced by seven steps of (1) a step for dipping soybeans into water, (2) a step for steaming the dipped soybeans, (3) a step for inoculating Bacillus natto on the steamed soybeans, (4) a step for inserting the inoculated soybeans into a container, (5) a step for fermenting the soybeans inserted into the container, (6) a step for cooling the fermented soybeans and (7) a step for packing the cooled soybeans. This method for enabling the overseas production comprises carrying out the steps (1)-(4), freezing the obtained semi-fabricated product, transporting the frozen semi-fabricated product by sea, defrosting the frozen product when the semi-fabricated product reaches a domestic factory, and finishing the semi-fabricated product according to the conventional method. The 'Natto' produced by the method can keep the quality as a commercial goods compared with the one produced in a domestic factory by conventional steps.;COPYRIGHT: (C)1999,JPO
