PROBLEM TO BE SOLVED: To provide a method for culturing Panax shinseng for eating fresh, capable of culturing also the leaf portions having been wasted without being used as a commercially valuable product, and to provide the Panax schinseng for eating fresh. SOLUTION: This method for culturing Panax schinseng for eating fresh comprises a seed-sowing process for sowing the seeds of the Panax schinseng on a nursery bed in a plastic green house, a green house, etc. to enable the thinning of the seedlings, and a growing process for maintaining temperature, humidity and water, finely ventilating to germinate the seeds, and growing the Panax schinseng in a size capable of being used as a sushi material.
