PROBLEM TO BE SOLVED: To obtain a spirit of an extract of wood and bamboo chips capable of being matured in a short period of time without harming an original taste by extracting the solute components of white oak chips with an ultrasonic action and recovering the evaporated molecules under a specific condition. ;SOLUTION: This spirit of an extract of wood and bamboo chips is obtained by immersing explosion-crushed white oak chips with a new pot 11 using a barley malt raw material in a cask 3 of the white oak, extracting solute components by an ultrasonic action, passing evaporated molecules by the ultrasonic action through the new pot 11 in a recovering vessel 4 and recovering. Further, it is preferable to immerse the white oak chips of which surfaces are charred, with the new pot 11 using the barley malt raw material, extract the solute components by the ultrasonic action, pass the evaporated molecules by the ultrasonic action through the new pot 11 in the recovering vessel 4 and recover.;COPYRIGHT: (C)1999,JPO
