Pretreatment agent for processing marine products and pretreatment method for marine products

PURPOSE:To minimize deterioration of quality of a marine product accompanied by processing of the marine product. CONSTITUTION:The pretreating agent is prepared by dissolving inorganic salts derived from whey in an aqueous solution of sodium chloride and adding sodium carbonate for keeping pH of the whole aqueous solution alkaline thereto. A marine product is immersed in this pretreating agent while keeping the immersing temperature to 0-20 deg.C. The pretreated marine product is subjected to processing such as boiling and thawing.
