Two new bacteriocins of the Streptococcus thermophilus microorganism having the amino acid sequences of SEQ ID NO. No. 1 and SEQ ID NO. No. 2, the signal peptides of these two bacteriocins, the nucleotide sequences that confer these bacteriocins and, in particular, the operon that directs these bacteriocins having the sequence SWQ id. 3, furthermore, strains producing at least one of these bacteriocins, and in particular the CNCM-1351 strain, a method for producing a supernatant extract comprising at least one of the two bacteriocins and using such bacteriocins as an active agent against pathogens in the production of food products, in particular cheese and sour milk as well as in the manufacture of cosmetic products.ŕ
