The present invention relates to a fryer which is connected to the front and rear sides of the fryer in a frying container, which is formed so as to enable various frying dishes to be separated using a separation characteristic that water and oil do not fuse with each other. The coil springs absorb the heat and transmit the heat to the heat pipe so as to prevent the heat loss as much as possible. In the lower part of the heat pipe, a plurality of through-air pipes used as the cooling device are arranged in the same direction as the heat pipe So that a large amount of cold air can be continuously passed through the air pipe to minimize the temperature of the oil layer in contact with the water below the air pipe to minimize oxidation and contamination of the oil. The present invention relates to a cold / hot expansion type fryer using separation characteristics of oil.
