FIELD: dairy industry. SUBSTANCE: zosterin preliminarily dissolved in pasteurized cooled water is introduced into normalized pasteurized mixture at temperature 55-65 C. Then mixture is cooled till temperature of souring, and introduced are sour and milk-clotting ferment. Prepared clot is cut and subjected to self-pressing, cooling, and after it, cream is introduced.
