The invention concerns a method for controlling (26) the gas extraction rate of a gas extractor from a cryogenic apparatus (10) provided with a cryogenic fluid supply (18, 20), said apparatus (10) being in contact with the environment. The method comprises the following steps: measuring the environment gas content (mo2) in the chamber atmosphere; defining a reference input content (uo2) for said measured content; computing the extraction rate (rc) of the extractor (26) on the basis of said measured content (mo2) to maintain said content substantially equal to said reference input content (uo2); and controlling said extractor (26) on the basis of the computed rate (rc). The invention further concerns a cryogenic apparatus for implementing the method and is applicable to quick-freezing tunnels.
