Breeding method of high alcohol resistant yeast

PROBLEM TO BE SOLVED: To separate and breed an ethanol-resistant yeast by using a 2- fluoroethanol-containing culture medium. SOLUTION: A (high alcohol-resistant) high alcohol-producing yeast is obtained by this method using a culture medium including 2-fluoroethanol. Further, a yeast strain that has high resistance against alcohol and high alcohol productivity can be exactly isolated in a shortened period by combining this breeding method with a selection culture using an isoamyl alcohol-including culture medium. By using this yeast strain, various kinds of alcoholic drinks with high alcohol contents can be produced.
