M method for producing optically-active (R)- and/or (S)-1-(2,5-dihydro-2,5-dimethoxy-2-furyl)ethanol via the methoxylation of 1-(2-furyl)ethanol with methanol, wherein optically-active (R)- or (S)-1-(2-furyl)ethanol is methoxylated electrochemically on an anode, best id carbon, graphite or platinum, in a methanol solution of sodium or potassium hydroxide with a concentration preferable of 0.5-2.5 percent at a temperature of 15-25 degrees C, with a current density of 2.0-5.0 A/dm2, until a charge flow of 2.0-4.0 F per 1 mole of substrate is achieved.
