Described is a process for preparing natural benzaldehydeand acetaldehyde and compositions of matter containing naturalbenzaldehyde and acetaldehyde as well as products producedthereby and organoleptic utilities therefor, which processcomprises the step of contacting with base naturally occurringcinnamaldehyde or a natural product rich in cinnamaldehyde suchas Ceylon oil of cinnamon, Ceylon cinnamon bark, Saigon cinnamonbark, cassia oil, Ceylon cinnamon quills, cinnamon leaf oil,oil of cinnamon Madagascar or the like according to the reaction:(see above formula)the reaction taking place in the absence of any other reagentsexcept inert solvent.
