A sulfur metabolizing gene from the roots of onion

The invention provides a novel alliinase gene isolated from the roots of onion plants. Also provided is the enzyme encoded by the gene. A binary vector including the gene is described together with its use to transform Allium species, particularly onions. The invention also provides a method of manipulating alliinase levels in plants.
