PURPOSE: Provided is a method for continuously producing fructose syrup from inulin using immobilized recombinant inulase, thereby the fructose syrup can be safely produced from inulin in higher yield. CONSTITUTION: The method for continuously producing fructose syrup from inulin comprises the steps of: incubating Saccharomyces cerevisiae containing a plasmid pYI10 at 30 deg. C for 48 hours to express inulinase derived from Kluyveromyces marxianus; purifying the expressed and exosecreted inulinase; immobilizing the purified inulinase on carriers Amino-cellulofine; packing a packed-bed enzyme reactor with the immobilized inulinase; producing raw inulin from Jerusalem artichoke by heating Jerusalem artichoke to 121 deg.C for 15 minutes, and followed by filtering and drying it under vacuum condition; and continuously adding raw inulin into the packed-bed enzyme reactor and reacting it with immobilized inulinase.
