The method involves targeted irradiation of the tissue with light with a continuous spectrum, both with and without a non-absorbing scattering medium. The light scattered in a predetermined direction is detected in each case and the remission is determined as a function of the wavelength setting to a standard in operation. The light scattering without the scattering medium is projected on that with the medium, to determine the concentration. The method involves targeted irradiation of the tissue with light with a continuous spectrum. The light scattered by the tissue in a predetermined direction is detected. The remission of the returned light is determined as a function of the wavelength setting to a standard in operation. A non-absorbing scattering medium is introduced into the light path. Light scattered in the predetermined direction by the sample and the scattering medium is detected and the remission of this light is determined. The remission of the light without the scattering medium is projected on that with the medium. The fractal dimension of the projection is determined. The concentration of the substance is determined from the fractal dimension.
