A carbohydrate mixture comprising one or more soluble oligosaccharides and one or more soluble polysaccharides, with at least 80 wt. % of each being prebiotic, i.e. not digested and not resorbed in the small intestine, is new. A carbohydrate mixture for use in dietetic nutrition or pharmaceuticals comprises: (1) one or more soluble oligosaccharides (5-95 wt.%) (monosaccharides to hexasaccharides) (A); and (2) one or more soluble polysaccharides (5-95 wt.%) (from heptasaccharides) (B); with at least 80 wt.% of components (A) and (B) being prebiotic.
