The invention concerns a device for measuring a sound wave propagation time in a continuous phase of a diphasic mixture (28) comprising the continuous phase and a dispersed phase forming droplets (40) in the continuous phase. Said device comprises: an electroacoustic transducer (12) for transmitting sound waves (30) and delivering a reception signal of reflected sound waves; means for establishing a propagation time from the signals delivered by the transducer. The device further comprises means for focusing sound waves and the sound wave frequency being adjusted to cause the waves to be reflected on the dispersed phase droplets, substantially located in a focusing zone.
