PURPOSE: To provide a process for treating a latex capable of maintaining the heat stability of a polymer to be treated and solving the problem of foaming, and an apparatus for carrying out this process. ;CONSTITUTION: A latex is treated by passing a heat exchanger consisting of a closed chamber distinctly divided into two parts, upper part 3 and lower part 4, the obstacle-free upper part 3 being under reduced pressure and connected with a recovery plant for residual monomers and the lower part 4 being provided with a divider forming a boundary 9 of two contiguous, separately extending circuits 10 and 11, and the latex to be treated being passed to one circuit 10 maintained in a state connected with the upper part 3 of the chamber through its top part over its entire part and a heat transfer liquid maintained at a temperature of 40-100°C being passed to the other circuit 11 separated from the upper part 3 of the chamber.
