METHOD FOR THERMALLY TREATING BIVALVE AND BIVALVE PACKED IN CONTAINER

PROBLEM TO BE SOLVED: To obtain a cooked bivalve which has a high quality and a high ensured nutritive value and whose extract is packed in a container, by charging bivalves and a medium in the electrically heatable food container having a specific structure, closing the container and then electrically energizing the container to efficiently heat the bivalves. ;SOLUTION: This method for thermally treating bivalves comprises charging the bivalves such as Tapes philippinarum 3 and a medium such as a broth, soy sauce or salt water in an electrically heatable food container, closing the container, and then energizing the container with an electric current having a frequency of 10 to 50 kHz to thermally treating the bivalves. The bivalves and the medium are preferably charged in a weight ratio of 1/1 to 2/1.
