PROBLEM TO BE SOLVED: To provide a method for producing a large amount of a food of processed bitter gourd that has an appearance of one body of bitter gourd and is cut into round slices and can be heat-treated before being served. ;SOLUTION: In the production process for processed bitter gourds, a bitter gourd is cut sideways so that the cavity 2 may be exposed to take out the seeds 3 and the soft body 4 inside, heated by filling the cavity 2 with hot water and simultaneously the whole part of the gourd body is placed and boiled in the hot water, then cooled down quickly, finally the cavity 2 is filled with the ingredients to give the objective processed bitter gourd.;COPYRIGHT: (C)2001,JPO
