PROBLEM TO BE SOLVED: To obtain an instant soup stock capable of using every part of squid, which has been not used and thrown away, without a waste and keeping the characteristic flavor of squid ink long, readily preservable.;SOLUTION: A squid is separated into arm parts and a body part. Eyeballs, proboscis and the guts at the body part side are extracted and a squid ink is squeezed out from an ink sac. The guts, etc., are put in enough water, boiled by a low flame for about half a day and filtered to give a soup. The soup is mixed with meat of squid, chopped Welsh onion, seasoning, etc., and freeze- dried into a solid state.;COPYRIGHT: (C)2000,JPO
