The invention provides mutant polypeptides of heat unstable Escherichia coli (LT) and the toxin Vibrio cholerae (CT) and the polynucleotides that encode them. LT and CT mutant polypeptides can be easily produced in plants and can be used to treat or prevent diseases caused by E. coli and V. cholera. Polypeptides are also usable as adjuvants.
