The present invention relates to a process for the preparation of a food with increased viscosity containing fruit or vegetables, which comprises - adding pectin methyl esterase to the fruit or vegetable or a pulp thereof in an amount effective to demethoxylate the pectin; - calcium chloride may be added; - allow the demethoxylated pectin gel of fruit or vegetable origin to form; and - the fruit or vegetables so treated are incorporated into the desired food form. The present invention relates to foodstuffs thus prepared and to a process for the preparation of apple jelly using a pectin methyl esterase. ŕ
