Cutting fish, especially salmon, into pieces and laying them inside mould, using two types of mould with fixed walls, one to receive the pieces and the other to store the pieces in a stack
Pieces of fish are transferred to a first mould with fixed walls, and then this is used to fill a larger volume second mould, also with fixed walls, forming a stack of fish which is pressed together under its own weight. A method for processing fish, especially salmon, comprises cutting the fish into two pieces and placing them inside a mould (2) without forming air pockets and whilst retaining the characteristic fish structure, using adhesive to bond the pieces together. At least two different moulds are used, each with fixed side walls, with a first type of mould being used to temporarily receive the pieces of fish without them sticking together, whilst a second type of mould has essentially the same cross-section, but a more greater volume. The second type of mould is filled from a series of moulds of the first type, which forms a fish column subjected to pressure under its own weight. An Independent claim is also included for the fish processing apparatus used.
