PURPOSE: A process for producing chitosan is provided to prepare the chitosan having higher deacetylation value and viscosity for short time by autoclaving it under the conditions of different concentrations of NaOH and reaction times. CONSTITUTION: A process for preparing chitosan starts with grinding process of chitin material to form chitin powers having a particle size of 20-40 mesh. 15g of the powdered chitin material is introduced into a 300ml vial then added with 45-50% NaOH in a ration of 1:10-1:15(w/v) relative to the chitin material and sufficiently admixed together. The mixture is poured into a preheated autoclave at 100 deg.C to perform deacetylation process at 121 deg.C and 15psi for 10-30 minutes. The deacetylated chitin is sufficiently washed in flowing water to filter and dry the washed material at 60 deg.C for about 4 hours to produce the chitosan product having higher deacetylation value and viscosity.
