The fryer (10) has a casing (11) containing a reservoir (12) for raw food (16), an unloading unit (15) to deliver raw food through a supply tube (14) into a frying drum (13) containing frying fat. The supply tube has a lock device to prevent vapour products from rising out of the frying drum through the supply tube. Preferably, the lock device has a casing with an exit and entrance, whose cross-sections correspond to the entry opening of the frying drum and a lock body rotating in the casing.
