Process for production of baked moldings from non-liquid dough comprises pressing in preheated compression mold, prebaking at about atmospheric pressure, compression and baking in compressed position
Production of baked moldings from non-liquid dough made from cereal flour comprises: placing the dough preform in a preheated compression mold with top and bottom parts; molding the dough by pressing to the required wall thickness; prebaking in the mold at about atmospheric pressure; compression to the required wall thickness; and completing baking in this position. Production of baked moldings from non-liquid dough made from cereal flour involves placing the dough preform in a compression mold with top and bottom parts, and baking in this mold. The process comprises: (a) molding the dough in the preheated mold by pressing to reduce the gap to the required wall thickness; (b) increasing the gap by reducing or removing the pressure and prebaking at about atmospheric pressure; and (c) compression to reduce the gap to the required wall thickness of the molding and completing baking in this position. An Independent claim is also included for the compression mold used in this process.
