Treatment of a sediment stream obtained by centrifuging milk followed by deaerating and pumping through a heating system comprises diluting the stream with some of the sediment-free component. The product is then pretreated in an evacuated vessel before heating. An Independent claim is included for a plant for treating milk comprising a centrifuge (1) in which milk (17) is separated into a stream (15) containing sediment and a sediment-free stream (16). A pump (7) feeds the sediment-containing stream through a heating system (18) and a cooler (13). An evacuated vessel (3) is connected to the discharge outlet of the centrifuge.
