Dermatological and cosmetic compositions comprising an oily phase, an aqueous phase in which the water is bonded, and a solvent phase having a matrix material in which an easily-oxidizable lipidic compound is dissolved or dispersed. The oily phase contains an emulsifying agent and the aqueous phase contains a cereal protein derivative or a starch derivative as thickening agent, the water being bound to an ethylene glycol or glycerol polymer. The solvent phase is formed from methylal preferably with one or more co-solvents. The easily-oxidizable lipid is a medium or long-chain polyunsaturated fatty acid, having 2 - 6 unsaturations in the chain. Independent claims are included for the process for preparing these compositions.
