PURPOSE:To obtain the food useful for promoting health, having excellent swelling and texture and low calorie by mixing a soybean protein with wheat flour, food fibers, a foaming agent and water to give dough and heating the dough by microwave. CONSTITUTION:This food fiber-containing expanded food is obtained by mixing 100 pts.wt. of a mixture of (A) 40-85 pts.wt. of a soybean protein and (B) 15-60 pts.wt. of wheat flour with (C) 1-15 pts.wt. of food fibers, (D) a foaming agent (egg white or baking powder) and (E) water to give dough and heating and expanding the dough by microwave.
