PROBLEM TO BE SOLVED: To provide a process for the production of a product effective for the utilization of the bamboo grass resource which is a specialty product of Japan and the application for keeping the health by efficiently extracting an active component from the leaf and stalk of bamboo grass at a high concentration. ;SOLUTION: For the efficient extraction of the leaf and stalk of bamboo grass, it is necessary to set the proper heat-treatment temperature and time meeting the component and composition of the grass. The present invention discloses a means for the efficient extraction of bamboo grass by a combination of the 1st pressurized hot water extraction, the heat-treatment under pressure and the 2nd pressurized hot water extraction. The extraction efficiency is further improved by using an alkaline water of pH 9 or over as the 2nd extraction water.;COPYRIGHT: (C)1999,JPO
