PROBLEM TO BE SOLVED: To provide a quality-improving agent for a farm product, capable of exhibiting extreme quality-improving effects such as the improvement in content and freshness in various farm products.;SOLUTION: This quality-improving agent for the farm products comprises an alcohol represented by general formula 1-1 [R¹¹ is a 10-22C hydrocarbon group; R¹² is H, a hydroxy group or a 1-24C hydrocarbon group; and R¹³ is H or a 1-24C hydrocarbon group], an ether compound represented by general formula 2-1: R²¹-O-(AO)_m-R²² (2-1) [R²¹ is a 12-24C hydrocarbon group; R²² is H or a 1-24C hydrocarbon group; AO is a 2-4C oxyalkylene group; and m is an average added molar number and 0-5], a fatty acid of general formula 3-1: R³¹-COO-(AO)_n-R³² (3-1) [R³¹ is an 11-29C hydrocarbon group; R³² is H, a 1-30C hydrocarbon group or the like; AO is a 2-4C oxyalkylene group; and n is an average added molar number and 0-5] or an ester compound thereof, an organic acid derivative obtained by bonding one or more functional groups of an organic acid having the two or more functional groups to a 1-30C group, and a glycerol derivative.;COPYRIGHT: (C)2002,JPO
