PROBLEM TO BE SOLVED: To provide a method for producing isoflavone aglucone in a high yield and in high productivity from soybeans or soybean embryo buds with Rhodotorula glutinis. ;SOLUTION: The present invention relates to a method for producing isoflavone aglucone with Rhodotorula glutinis, in more detail, to a method for producing isoflavone aglucone having a purity of ≥90% by culturing Rhodotorula glutinis (KCCM-10172) separated from Miso ball Koji and having an excellent isoflavone aglucone-converting ability in an extract solution extracted from soybeans or soybean embryo buds as a culture medium at pH 4.0 to 8.0 at a culture temperature of 25 to 35°C for 30 to 54 hr and adjusting dissolved oxygen.;COPYRIGHT: (C)2001,JPO
